LEFTOVER TURKEY RECIPE

Just a quick one from me today - here's a very easy "recipe" for your leftover turkey. This really jazzes up leftover cold meat and is also great with ham if that's what you prefer/have lots left of.

2 tsp lime juice
2 tsp honey or agave nectar
3-4 tsp sesame oil
1 tsp chilli flakes
Chopped coriander leaves
Chopped mint leaves
Seeds from 1 pomegranate
1 tbsp. sunflower seeds
1 red chilli, sliced very thinly
Leftover turkey or ham, sliced

Put the lime, honey, sesame oil, chilli flakes and herbs in a jam jar. Pop the lid on and give it a really good shake (if you want to make it in advance, don't add the herbs until just before serving). Pour the dressing over the turkey or ham slices, then top with pomegranate seeds, sunflower seeds and slices of red chilli. Serve with a warm red rice, sunflower seed and chopped spring onion salad, or an Ottolenghi cous cous salad with pistachios and chilli.

CHRISTMAS PRESENT IDEAS & RECIPES

I'm normally pretty good at Christmas shopping. I find things I know my nearest and dearest would love, and I either buy them and squirrel them away or keep a list of links to the items in my inbox and purchase a few weeks before Christmas to avoid that nail biting "will it arrive in time" last minute dash. This also means I can avoid Christmas shopping on the high street, which really is my idea of hell. However this year I feel a bit like I've lost my present buying mojo!! I hadn't had any brainwave ideas, and to be honest, I was struggling a bit to come up with any. So I've sat down, and I've done my research, and finally I've got a list together that I thought I'd share with you in case you too are struggling. Some of my ideas, naturally, are food orientated, whilst others are just great gifts I think most people would be happy to receive. I've also popped a couple of recipe ideas below of things you can make for your loved ones that will keep beyond the Christmas period so they can enjoy once the over indulgence period has stopped! The truffle recipe makes THE most delicious boozy truffles, and are from an excellent Christmas baking day I recently did in the Miele showroom, whilst the salted caramel recipe is my own, but also inspired by the Miele day where we made their version of the caramel - though I still think mine's better, and is already something I put in Kilner jars and give to people for birthdays. In fact, the last person I gave it to ended up using it to make a sticky toffee pudding, which they said was the best they'd ever tasted.

Anyway, on to the gifts....

For the foodies/kitchen lovers in your life, I've recently become obsessed with crockery (I know, I'm old!!) and found a wonderful website called Amara where I've been buying plates, cups, jugs and lots more from over the past few months, including these absolute beauties that I don't think any kitchen is complete without - Pols potten plates. I've also got the matching bowls, but if you order those beware that they are quite small!

LAST MINUTE HOMEMADE MINCE PIES

If you look for mince pie recipes online 90% off them just list mincemeat from jars as the main ingredient, but it's so easy to make your own mixture, and you only need ingredients that you probably already have at home. This recipe also doesn't need to sit for any time before being used to make mince pies so it's perfect if you feel you've run out of time!

I just grabbed whatever fruit was in the bowl, and you can vary the types and quantities of all the fresh and dry fruit as long as they add up to the right amount.

For 36 mince pies

600g dried fruit - I used about 200g sultanas, 200g raisins, 20g cranberries, 80g chopped apricots, 30g golden sultanas and 70g chopped dates
4 or 5 citrus fruit, zested and juiced - I used 2 large oranges and 3 clementines
4 apples or pears - I used 3 apples and 2 juicy pears, which made up for the small amount of juice from the clementines
60g butter
8 tbsp brandy
Grated nutmeg

Put all the ingredients, except the brandy and nutmeg, into a small heavy bottom saucepan, simmer and cover. Leave to gently simmer for 20minutes, stirring occasionally. After 20 minutes add 6 tbsp brandy, stir, cover and return to the heat for about 5 minutes. Once all the brandy is absorbed, turn the heat off and add the rest of the brandy and a good grating of nutmeg.
