Apparently one in four of us book holidays based on the food we'll eat while we're there, which makes a lot of sense - I wouldn't want to be away for a week or two without being able to eat good food. I think often the best food you get while you're on holiday is the really authentic food, and that which is made using fresh, local ingredients. Travel Supermarket think the same, and recently hosted a street food challenge where five street food vendors battled it out to be crowned champion holiday street food stall. Competitors made dishes from France, Italy, The Seychelles, Sri Lanka and America. I was asked to recreate one of these recipes at home and picked the New York style wings from Orange Buffalo. This is my version of their recipe (as always!)
Serves 4
For the wings:
1kg organic chicken wings - ask for just the middle piece (SO important to buy organic/free range with chicken wings. Battery chickens are injected with horrible drugs to make them grow faster, and those injections are in their wings, so if you're eating non-free range/organic chicken wings, then you're eating the part of the bird that's had drugs pumped into it. Chicken wings are super cheap, so it won't cost you much more to buy nice ones)
4 tbsp. siracha sauce
4 tbsp. honey
For the blue cheese sauce:
200g blue cheese
2 tbsp. crème fraiche
2 tbsp. mayonnaise
4 tsp white wine vinegar
1 tsp crushed garlic
2 spring onions
2 tsp chopped chives
2 tsp Dijon mustard
Salt and pepper
Mix the siracha sauce and honey in a large flat dish, and add the chicken wings. Toss them in the sticky sauce until they're coated in it, then cover the dish and put it in the fridge for 1-12 hours, depending on how much time you've got - the longer the better.
When you're ready to cook the wings, turn the oven on to 200C.
Lay the chicken wings flat on a roasting tray and pop them in the oven. Cook for 20 minutes, or until cooked through and golden.
Add all the ingredients for the blue cheese sauce to the magimix and blend until you've got a smooth sauce. If it's too thick, add a little more vinegar, or a splash of water.
Serve the wings piled high in a bowl with lots of sauce to go round.
